At eleven, Mira locked the bakery's front door and faced her first night shift alone, with festival orders covering the steel table. Beside the digital ovens, the hand-cranked dough divider seemed an anachronism, while a jar of dormant starter waited in the refrigerator for next week's loaves. An innocuous rattle from the roof vent made her jump, then laugh, because every familiar room sounded different after closing. The county inspector had sanctioned overnight production for festival weekend, and his signed form above the mixer reassured her.
By midnight, Mira was measuring poppy seeds with the fastidious care Mr. Vale usually reserved for wedding cakes. Her precision was laudable, but three hundred buns were due by sunrise, and perfection was beginning to slow her. She recalled his favorite adage, "Measure twice, bake once," and stopped checking each scoop a third time. Friday's surplus normally went to indigent families through the church pantry, whose recipients Mr. Vale would never divulge to curious customers.
At one twenty, Mira discovered that a cursory afternoon inventory had counted two empty flour sacks as full ones. Her belief that careful workers could prevent every mishap was a fallacy, exposed by the blank shelf before her. Ignoring the shortage might turn the entire order into a fiasco, yet fear of embarrassment did not deter her from calling Mr. Vale. He answered sleepily, directed her to rye flour in the basement, and suggested replacing a third of the usual dough.
Before she could begin, Len, the teenage helper, noticed the lights and knocked, offering hands without demanding an explanation. Mira worried he would misconstrue the substitution as carelessness, but she showed him the inventory sheet and Mr. Vale's written formula. Len began to disparage rye buns as heavy country food, insisting with dogmatic certainty that festival customers would reject them. She told him to desist, baked a small test batch, and watched his argument collapse when he tasted one.
Together they adjusted water and yeast, and their separate motions gradually began to coalesce into a rhythm of mixing, shaping, and loading trays. Len worked laudably, catching two uneven rolls before Mira did and cleaning the divider while the final batch browned. At sunrise, an ephemeral wash of pink crossed the windows and faded as the festival van arrived for its warm, fragrant cargo. The night had not proved Mira flawless; it had shown her something sturdier: good judgment included asking for help before trouble hardened.
